This is a classic from my youth. I still appreciate it but now that I’m a little older I’ve decided to replace the Campbell’s Tomato Soup with Safeway brand Tuscan Tomato & Basil Bisque and the white bread with Whole Clove Garlic Bread. I’ve gotten better with age so why shouldn’t my childhood favourites? This dish is particularly good for lunch on a cold winter’s day. It’s the kind of down-home food that can help you get through the bitterly cold days we experience in this part of the country.
I used to really love Campbell’s Tomato Soup (really just in conjunction with grilled cheese sandwiches). One day that love affair ended. I thought my tastes had changed (they did) but there was more to it. I cracked a can and made it as usual and it tasted WAY too sweet. I looked at the can I just made and a can that was in the pantry. Sugar had moved up the list of ingredients. Why would they do that? The spell was broken. For years I had grilled cheese sans tomato soup. I’m capable of making a tomato soup from scratch but I just don’t see the need for that when I’m making a really simple lunch. Today I’m using Safeway brand Tuscan Tomato & Basil Bisque. It tastes great. It’s a snap to prepare and it’s low on hard to pronounce chemical ingredients. I add a splash of red wine vinegar to brighten it up a bit and some fresh basil to make it more basilie. A crack of fresh black pepper doesn’t hurt either. Some times I throw in a bit of fresh tomato to change things up a bit.
I love using Sobeys Whole Clove Garlic Bread for grilled cheese. It’s crusty on the outside and soft / chewy on the inside. It makes a hell of a good grilled cheese sandwich. Today I used Kraft Extra Cheddar cheese slices. It melts quickly so the sandwich toasts to perfection and the cheese is fully melted. Grilled cheese is made with whatever cheese I have kicking around that house. I’ve used provolone along with some prosciutto and basil to make an Italian version of croque-monsieur.
